Name and define the mechanism responsible for release of water on adding salt to the vegetables.
On adding salt, vegetables release water due to exosmosis. Exosmosis occurs whenever the external medium is hypertonic as compared to osmotic concentration inside living cells.
Exosmosis is the movement of liquid from inside to outside .
