Why does our saliva production increase if we see or smell or even think of a tasty food?

More saliva is made when the mouth contains spicy, sour or acidic foods. When taste buds are stimulated by these chemicals they trigger the release of saliva..
Saliva secretion is regulated by the autonomic nervous system, and salivation increases with the smell, thought or presence of food, as well as with the presence or thought of a foreign substance in the mouth. The salivary glands swell during eating and subside afterward.
